Born in the valleys of Oaxaca, this extraordinary sauce is the product of indigenous Zapotec knowledge fused with centuries of mestizo culinary evolution. It is not simply a recipe — it is a living tradition, passed from grandmother to granddaughter in smoky kitchens that smell of charred chiles and cacao.

Our version comes directly from Doña Esperanza Ruiz, a tlayuderia owner in the Mercado 20 de Noviembre who has been making mole negro for over four decades. She insists on toasting the mulato, ancho, and chilhuacle negro chiles herself over a clay comal until they blister and perfume the entire market corridor. The addition of avocado leaf and Mexican chocolate is non-negotiable.

The result is a sauce of extraordinary complexity — smoky, bitter, sweet, earthy, and faintly spiced — that transforms a simple turkey leg into something worthy of a feast. Allow yourself a full day. This is not fast food. It is ceremony.
